Post #14: Sour and Spicy Shredded Potato


This is a very famous dish in Sichuan Cuisine. This dish is also very common of home cooking in China. Since it is sour and spicy, a lot of children like this dish.
The materials you need to prepare:
Potatoes (two)
Green peppers (one)
Dry red peppers (two)
Green onions
Vinegar
Salt
Oil
First, wash the potatoes and peel them. Then cut the potatoes into potato chips, and cut green and dry red peppers into pieces.
Second, wash all the potato chips into the cool water for several times. Then, put them in a big bowl. Finally use the vinegar to dip the potato chips, do not use all the vinegar to dip them, add some water in the bowl. This step can make the potatoes more sour and tasty. Wait for about 15 to 20 minutes, pour out the water.
Third, heat the oil in the pot, put the green peppers and dry red peppers into it to cook.
Fourth, put all the potato chips into the pot to cook them together. Cook about 5 minutes and then add some vinegar and salt. Continue to cook 3 minutes to make sure the vinegar are absorbed by the potatoes.
Finally, you can add some chili sauce.
