Post #15: Braised eggplant

This dish is a little bit oil, because the eggplant would absorb a lot oil when you are cooking. It still tastes very good. Some people really like this dish. If you do not mind too much oil, you really need to try this dish.

The materials you need to prepare:

Eggplant (one)

Tomato (one)

Pork

Green pepper (one)

Soy sauce

Sugar

Salt

Oil

Vinegar        

Starch


First, wash all the vegetables you need. Cut the eggplant, green pepper and tomato into pieces.

Second, heat the oil in the pot.  Make sure the oil is enough and can cover every piece of eggplant. Then fry the eggplant to golden color.

Third, make the sauce, pour some soy sauce and a little bit vinegar in a bowl, you can also add some sugar if like it tastes sweet. One spoon of sugar is enough. And then add the starch and some water in the bowl. Stir them to make sure they are mixed.

Fourth, put the pork into the pot and cook. Then put tomato in it to cook them together. Finally, pour the sauce in it. After cooking for a couple of minutes, it is done!


Tips:

When you fry the eggplant, you need to use the small fire.

Do not add too much starch in the sauce.
